Sweet Potato Biscuits

6 Tab. shortening, 2 cups flour, 4 Tab. sugar, 4 cups mashed sweet potatoes, 3 tsp baking powder, 1 1/2 tsp. salt

Preheat oven to 425 F. Sift flour, baking powder and salt. Add sugar and vegetable oil to sweet potatoes while hot. Combine the two mixtures. Knead for one minute.  Roll to 3/4″ thickness.  Cut into shapes and bake on baking sheet for 12 to 15 minutes.

  3. These look great. I love sweet potatoes in any form. I haven’t tried, but we have sweet potato fries from Ore Ida in the stores.

    I love biscuits. The combination is something I want to try.
