This recipe is from The More With Less Cookbook and they are the best cookies. I like this cookbook quite well for the most part.
Cream together 1 cup shortening (may use half margarine, half lard) *I may try substituting more healthful coconut oil, 1/4 cup peanut butter, 1/2 cup sugar, 1/2 cup brown sugar, 2 eggs, 1 tsp vanilla extract
1 1/2 cup flour, 1 tsp baking soda, 1/2 tsp salt, 2 cups rolled oats, 2 cups chocolate chips (I like the dark chocolate chips) and 1 cup nuts if you like. I never add nuts because some family members object.
Mix well and drop by teaspoonfuls onto greased cookie sheets. Bake at 375 for 10 minutes. Makes 6-8 dozen cookies.
